This recipe can adapt to any amount of puff pastry you want to use or use up.
INGREDIENTS
INDIVIDUALLY (ready to use):
puff pastry, ready to bake
grated mixed hard cheese, such as Parmesan, Pecorino Romano, or aged cheddar
olive oil
salt and fresh ground pepper
smoked or sweet paprika
cayenne pepper
PREPARATION
1. Heat the oven to 400°F and ready a sheet pan with parchment paper.
2. Brush top of pastry with olive oil.
3. Sprinkle on salt, pepper, paprika and cayenne. Top with cheese and, using a flour-dusted rolling pin, press down to adhere to dough.
4. Using a pizza cutter, cut the dough into strips, about 1-inch wide.
5. Pick up a strip of dough and twist from both ends.
6. Bake for 10 minutes; flip and continue to bake for 5 to 8 more minutes, or until browned and crisp.
